Chicken Stew with Rice

Fluffy sweet potato topped with sautéed spinach and feta. This delicious gluten-free meal is part of our weekly meal plan collections.
Preheat oven to 200°C. Pierce potatoes, rub with oil, bake 45–55 minutes until fluffy.
Sauté garlic in oil 1 minute. Add spinach and cook until wilted. Season.
Cut potatoes open, fluff flesh with a fork.
Top with spinach and crumbled feta. Add chilli flakes if desired.
