Pulled Pork Bowl
Monday pork served over rice with roasted vegetables
Ingredients
- Leftover pulled pork
- 300 g white rice
- 3 carrots, roasted
- 2 parsnips, roasted
- 2 tbsp olive oil
- Fresh cilantro
Instructions

Cook rice per instructions.

Toss carrots and parsnips with oil and salt. Roast at 200°C for 25 minutes.

Reheat pulled pork gently.

Build bowl: rice, vegetables, pork, and cilantro.
