Slow Cooker Lamb Tagine

Aromatic Moroccan-style lamb with dried apricots and almonds

Ingredients

  • 1 kg lamb shoulder, cubed
  • 2 onions, diced
  • 4 garlic cloves
  • 200 g dried apricots
  • 100 g sliced almonds
  • 1 x 400g canned tomatoes
  • 1 tsp cinnamon
  • 1 tsp cumin
  • 1 tsp ginger powder
  • Salt and pepper

Instructions

    Brown lamb in hot oil. Place in slow cooker.

    Add onions, garlic, tomatoes, apricots, and all spices.

    Cook on low 8 hours or high 4–5 hours.

    Toast almonds in a dry pan. Scatter over tagine before serving.

  • Serve with rice or GF couscous for an authentic feel.
