Hearty Beef Stew

Slow-cooked beef with root vegetables in rich broth

Ingredients

  • 800 g beef chuck, cubed
  • 3 carrots, chopped
  • 3 potatoes, cubed
  • 2 celery stalks, sliced
  • 1 onion
  • 4 garlic cloves
  • 500 ml beef broth
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 2 tbsp olive oil

Instructions

    Brown beef in batches in hot oil. Set aside.

    Cook onion, garlic, and celery. Add tomato paste and cook 2 minutes.

    Return beef. Add carrots, potatoes, broth, and thyme.

    Simmer covered 1.5 hours. Season and serve.
