Creamy Chicken & Mushroom Pie

Filling chicken and mushroom in a GF cauliflower topping

Ingredients

  • 600 g chicken breast, cubed
  • 400 g mushrooms, sliced
  • 1 onion
  • 3 garlic cloves
  • 200 ml heavy cream
  • 500 ml chicken broth
  • 1 large cauliflower, for mash topping
  • 3 tbsp butter
  • Salt and pepper

Instructions

    Fry chicken in butter until cooked. Remove. Cook onion, garlic, mushrooms.

    Return chicken, add broth and cream. Simmer 10 minutes until thick.

    Steam cauliflower, blend with butter and salt into smooth mash.

    Pour filling into a dish, top with cauliflower mash, grill 10 minutes until golden.
