Chicken Fried Rice Comfort Bowl

Fragrant rice with shredded chicken and mixed vegetables

Ingredients

  • 400 g cooked rice (day-old)
  • 400 g chicken breast, cooked and shredded
  • 3 eggs
  • 200 g peas (frozen)
  • 3 garlic cloves
  • 3 tbsp GF soy sauce
  • 2 tbsp sesame oil
  • 2 spring onions

Instructions

    Heat sesame oil in a wok. Fry garlic 30 seconds.

    Push to one side, scramble eggs. Add peas and stir-fry 2 minutes.

    Add rice and chicken, breaking up clumps.

    Pour over soy sauce, toss everything. Top with spring onions.
