Vegetable & Herb Frittata

Baked eggs with abundant greens, herbs, and cheese

Ingredients

  • 8 eggs
  • 200 g spinach or kale
  • 200 g mushrooms, sliced
  • 100 g feta or cheddar
  • 1 onion, diced
  • 2 garlic cloves
  • 2 tbsp olive oil
  • Fresh parsley and dill
  • Salt and pepper

Instructions

    Preheat oven to 180°C. Fry onion and garlic until soft. Add mushrooms, cook 3 minutes.

    Add greens and stir until wilted. Season.

    Whisk eggs, pour over vegetables. Scatter cheese on top.

    Bake 20–25 minutes until set and golden. Slice and serve.

💡Tips

  • Frittata is just as good cold — perfect for next day lunches.
