Vegetable & Chickpea Tacos
Seasoned roasted chickpeas in GF tortillas with fresh toppings
Ingredients
- 2 x 400g canned chickpeas, drained
- 4 gluten-free tortillas
- 1 avocado
- 100 g cherry tomatoes
- 100 g lettuce
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- Lime juice
- Salt and pepper
Instructions

Toss chickpeas with oil, cumin, paprika, salt. Roast at 200°C for 25 minutes until crispy.

Warm tortillas in a dry pan.

Mash avocado with lime juice and salt.

Fill tortillas with chickpeas, avocado, tomatoes, and lettuce.
