Curry Lentil Buddha Bowl

Leftover curry over quinoa with roasted vegetables

Ingredients

  • Leftover lentil curry
  • 300 g quinoa
  • 2 carrots, roasted
  • 1 sweet potato, cubed and roasted
  • Fresh cilantro and lime

Instructions

    Cook quinoa per instructions.

    Roast carrot and sweet potato at 200°C with oil and salt for 25 minutes.

  3. 3

    Reheat curry gently.

  4. 4

    Build bowl: quinoa base, curry, roasted vegetables, fresh herbs, lime juice.
