Falafel-Inspired Chickpea Patties
Crispy patties with tahini sauce and roasted vegetables
Ingredients
- 2 x 400g canned chickpeas, drained
- 1 egg
- 3 garlic cloves
- 1 tsp cumin
- 1 tsp coriander
- Fresh parsley
- 3 tbsp GF flour
- 2 tbsp tahini
- Juice of 1 lemon
- Salt and pepper

Blend chickpeas, garlic, egg, cumin, coriander, parsley, and flour into a rough mixture.

Form into 12 small patties. Chill 15 minutes.

Pan-fry in oil 3–4 minutes per side until golden.

For sauce: mix tahini, lemon juice, water, salt until smooth. Serve with patties.
💡Tips
- Chilling the patties helps them hold together during frying.
