Baked Sweet Potato & Greens

Fluffy sweet potato topped with sautéed spinach and feta

Ingredients

  • 4 large sweet potatoes
  • 300 g spinach
  • 150 g feta cheese, crumbled
  • 3 garlic cloves
  • 2 tbsp olive oil
  • Salt, pepper, and chilli flakes

Instructions

    Preheat oven to 200°C. Pierce potatoes, rub with oil, bake 45–55 minutes until fluffy.

    Sauté garlic in oil 1 minute. Add spinach and cook until wilted. Season.

    Cut potatoes open, fluff flesh with a fork.

    Top with spinach and crumbled feta. Add chilli flakes if desired.
