Thai Meatballs & Coconut Broth

Aromatic meatballs in creamy coconut soup with spinach

Ingredients

  • 500 g ground pork or chicken
  • 1 x 400ml coconut milk
  • 500 ml chicken broth
  • 1 tbsp green curry paste
  • 200 g spinach
  • 2 tbsp GF soy sauce
  • 1 tbsp fresh ginger
  • Lime juice and cilantro to serve

Instructions

    Mix meat with ginger, 1 tbsp soy sauce, and a pinch of salt. Roll into small balls.

    Bring broth and coconut milk to a simmer with curry paste.

    Drop meatballs into broth. Simmer 10–12 minutes until cooked through.

    Stir in spinach until wilted. Finish with lime juice and cilantro.
