Spanish-Style Rice & Peppers

Golden rice with roasted red peppers, onions, and paprika spice

Ingredients

  • 400 g white rice
  • 3 red bell peppers, diced
  • 2 onions, diced
  • 3 garlic cloves, minced
  • 2 tsp smoked paprika
  • 400 ml vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper

Instructions

    Heat oil in a large pan. Cook onions and garlic until soft.

    Add peppers and paprika, cook 5 minutes until peppers soften.

    Add rice and stir to coat in the spiced oil.

    Pour in broth, bring to a boil, then cover and simmer on low 18 minutes.

    Fluff with a fork and serve.

💡Tips

  • Let the rice steam off heat for 5 minutes after cooking for perfect texture.
