Spanish Seafood Paella

Golden rice with shrimp, mussels, and saffron-infused broth

Ingredients

  • 400 g paella or short grain rice
  • 600 g shrimp and mussels mixed
  • 1 onion, diced
  • 2 garlic cloves
  • 1 pinch saffron threads
  • 1 litre fish stock
  • 1 x 400g canned tomatoes
  • 2 red peppers, sliced
  • 3 tbsp olive oil
  • Salt and paprika

Instructions

    Steep saffron in 2 tbsp warm water.

    Fry onion, garlic, and peppers in oil 5 minutes. Add tomatoes and paprika.

    Add rice, stir 2 minutes. Pour in stock and saffron. Bring to a boil.

    Arrange seafood on top. Cook uncovered 18–20 minutes. Rest 5 minutes before serving.

💡Tips

  • Do not stir after adding seafood — a crispy bottom (socarrat) is the goal.
