Spanish Seafood Paella
Golden rice with shrimp, mussels, and saffron-infused broth
Ingredients
- 400 g paella or short grain rice
- 600 g shrimp and mussels mixed
- 1 onion, diced
- 2 garlic cloves
- 1 pinch saffron threads
- 1 litre fish stock
- 1 x 400g canned tomatoes
- 2 red peppers, sliced
- 3 tbsp olive oil
- Salt and paprika
Instructions

Steep saffron in 2 tbsp warm water.

Fry onion, garlic, and peppers in oil 5 minutes. Add tomatoes and paprika.

Add rice, stir 2 minutes. Pour in stock and saffron. Bring to a boil.

Arrange seafood on top. Cook uncovered 18–20 minutes. Rest 5 minutes before serving.
💡Tips
- Do not stir after adding seafood — a crispy bottom (socarrat) is the goal.
