Indian Chickpea Curry
Creamy curry with spinach, tomatoes, and aromatic spices
Ingredients
- 2 x 400g canned chickpeas
- 300 g spinach
- 1 x 400g canned tomatoes
- 1 x 400ml coconut milk
- 2 onions, diced
- 4 garlic cloves
- 1 tbsp garam masala
- 1 tsp turmeric
- 1 tsp cumin
- 2 tbsp oil
Instructions

Fry onion and garlic in oil until golden. Add spices and stir 1 minute.

Add tomatoes, chickpeas, and coconut milk. Simmer 20 minutes.

Stir in spinach until wilted.

Serve over rice with fresh cilantro and naan (GF optional).
