Chicken Stew with Rice
Warming comfort stew with tender chicken and vegetables
Ingredients
- 600 g chicken fillets, cut into chunks
- 300 g white rice
- 3 carrots, sliced
- 2 onions, diced
- 3 garlic cloves, minced
- 500 ml chicken broth
- 2 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions

Heat olive oil in a large pot. Cook onions and garlic until soft, about 5 minutes.

Add chicken and brown on all sides, about 4 minutes.

Add carrots, thyme, and broth. Bring to a boil.

Reduce heat and simmer covered for 25 minutes.

Cook rice separately. Season stew and serve over rice.
